This Anaerobic Fully washed lot is comprised of the famed Geisha variety. Known for high its complex, floral profile and high cup score, this Geisha lot is not to be missed. In the cup, this lot from the Lopez family is bursting with complex fruit and floral flavors and delicate sweetness. Cherry is selectively handpicked. In the field, pickers use a refractometer to ensure cherry is a peak ripeness when picked. Cherry rests overnight and is then analyzed again to ensure Brix content is still within optimal range. Then, cherry pulped and fermented in sealed containers. Parchment is washed in clean water and dried in parabolic driers. Jairo keeps careful track of the temperature within the drier and uses ventilation to control temperature and humidity to ensure even drying. Parchment is raked frequently to ensure even drying. It takes approximately 10 to 20 days for parchment to dry.
